At Marathon Foods I was honoured to have a full tour of the dim sim line – surprisingly a foodstuff invented right here in Melbourne. But Marathon also make shumai and the machine that makes them needs periodic servicing, so I followed the Japanese engineer round for a week while he got it humming.

We returned for a complete refit in 2016.
